Cauliflower Rice

Ok so I found this recipe on the net because I was looking for something that I could have without all the carbs.







Ingredients:

Services 3-4
½ head cauliflower
½ teaspoon Garlic

Directions:

  1. Put the cauliflower through the food processor or chop by hand to a semi fine consistency.
  2. You can now steam, microwave or sauté with butter.
  3. Please do not overcook.

Thai Soup

Ok so this is a fave in our house. It is also great for those of us watching our weight, as it has very little fat and very low in carbs and cals. So easy to make and it freezes as well.


Serves 8:
150g skinless chicken
cooking spray
1 teaspoon crushed garlic (in jar)
1 teaspoon crushed ginger (in jar)
1/2cup shallots sliced
1/2cup red capsicum sliced
1/2cup green capsicum sliced
1/2 x 227g can bamboo shoots (drained and sliced)
1cup mushrooms sliced
2 bok choy thinly sliced
2 tablespoons salt reduced chicken-style stock powder
2 tablespoons fish sauce (i don't add this as I don't like fish sauce)
2 tablespoons soy sauce 43%less salt
1 1/2liters of water
1 cup hokkien noodle (I use the whole pack cause I like the noodles)
fresh chilli chopped (to taste also optional)
1/4cup coriander leaves chopped.

Cut chicken into small strips. Coat the base of a large saucepan with cooking spray. Brown chicken with ginger and garlic, add shallots, capsicum, bamboo shoots, mushrooms and bok choy, saute for 1 minute. Add stock powder, fish sauce and soy sauce, pour in water, bring to boil. Add hokkien noodles, chilli and coriander and simmer for 5minutes.
